Szimpla Kert opened in a condemned tenement in 2002 with mismatched furniture nobody had paid for, and the model spread across the old Jewish quarter. The courtyards fill from about ten, the drinks stay cheap by western standards, and a guided crawl mostly buys you the doors that have queues and the ones that do not.

The Caves Beneath the City
The same thermal water that fills the baths dissolved 200 caves out of the hill Buda stands on, and two of them run tours. Pál-völgyi is the walking one, with lights and handrails. The adventure trips put you in overalls and a helmet and send you through gaps named after how much of you fits.

The Puszta Horsemen
Two hours east of the city the land flattens into grass and the csikós ride standing on the backs of two horses while driving three more in front. It is a working stud farm tradition, not a stage act, and the day usually comes with a carriage ride and a long lunch of goulash.

The city sits in a basin and January hovers around freezing, with a grey lid on it from November. This is the one capital where that improves things: the outdoor pools steam, the cave temperature never moves off 11 degrees, and the bars were built indoors around courtyards for exactly this reason.
